Brown Butter Butterscotch Bars

Ingredients
  • 8 ounces unsalted butter
  • ⅔ cup brown sugar, packed
  • ⅓ cup vanilla sugar (can substitute granulated sugar)
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • 2½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • ⅔ butterscotch chips
  • ⅛ cup mini semi sweet chips
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
Directions
  1. Line a 9×13 inch baking dish with parchment paper. set aside.
  2. Place butter into a medium saucepan over medium heat. Melt and cook until browned, swirling occasionally. Remove from heat and let cool for 15 minutes.
  3. Transfer butter to a large mixing bowl or stand mixer.
  4. Add sugar, mixing until well combined. Add eggs and vanilla, stirring well.
  5. Slowly add flour, cinnamon, baking soda, salt mixing until just combined.
  6. Preheat the oven to 350 degrees F.
  7. Pour the butterscotch and semi sweet chips into the mix and using a spatula mix until combined.
  8. Transfer to prepared baking dish, pressing evenly.
  9. Place sugar and cinnamon into a small bowl, stirring then sprinkling over top of pressed dough. Bake for 25-30 minutes until baked through.
  10. Remove from oven and let cool for 30 minutes then cut into square and serve.

What is there not to love about bar cookies anyway?  If you are in a pinch for time, bar cookies are perfect.  You don’t have to take the time to form them into cookies.  Just pour them into a pan, bake, cool, cut and serve.
