Chicken Crunch

Prep Time: 15 minutes

Cook Time: 8 minutes

Total Time: 23 minutes

Ingredients

  • 2 cups Captain Crunch cereal
  • 1 1/2 cup corn flakes
  • 1 egg
  • 1 cup milk
  • 1 cup all purpose flour
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper
  • 2 pounds chicken tenders
  • oil for frying

Instructions

  1. Crush the cereals in a food processor and place in a shallow bowl. set aside
  2. In a shallow bowl, add the flour, onion powder, garlic powder, and the white and cayenne pepper. Set aside
  3. Put the egg in a second shallow bowl and mix with the milk.
  4. Dip the chicken strips first in the flour, then the egg and then the cereal.
  5. Heat 1/4 inch of oil in a large skillet over medium heat.
  6. Cook the strips in batches until golden brown and cooked through, 5 to 7 minutes, turning them so they don't burn. Drain on paper towels

Notes

Serve with Honey Mustard or Creole Mustard

Years ago when I first visited Planet Hollywood, my friends kept telling me that the Captain Crunch chicken was a must try dish.  I thought is sounded, well, gross.  However, they all begged me to give it a try.  The girls were probably 6 and 8 years old at the time, so why not, I ordered a plate for the girls.  And maybe I would try a bite.  When the dish arrived and I tested it out, I immediately ordered another plate.
