This homemade Chicken Chow Mein is just like what you get at better than your favorite Chinese restaurant and can be made in no time.

- 1 lb refrigerated chow mein noodles or 8 oz dry thin spaghetti
- 1 lb boneless skinless chicken thighs, sliced into ½-inch thin strips
- 2 Tbsp vegetable oil
- 3 cups thinly sliced cabbage
- 1½ cups matchstick carrots
- 1 bunch asparagus tips
- 4 green onions, chopped
- 1½ teaspoons minced ginger
- 2 cloves garlic, minced
- ¼ cup low sodium soy sauce
- 1 Tablespoon Hoisin sauce (or more to taste)
- 2 teaspoons coconut palm sugar (or sweetener of choice)
- 1 teaspoon sesame oil
- Prepare noodles according to directions on package if making spaghetti. If using the fresh chow mein noodles cook them last.
- In a bowl whisk together soy sauce, hoisin sauce, sugar and sesame oil, set aside.
- Heat oil in a wok or large and deep non-stick skillet over medium-high heat.
- Add chicken and cook until chicken is halfway cooked through, about 4 minutes (outsides should be white).
- Add cabbage, carrots, asparagus, green onions, and ginger and saute until veggies are tender and chicken is cooked through, about 4 minutes, adding in garlic during last minute of cooking.
- If using fresh noodles, remove the chicken and veggies to a warm plate, add 1 tablespoon oil and 2 tablespoons water. Add the noodles and fry to 4 minutes.
- Return the chicken and veggie mixture to the pan. Add the sauce and combine until he noodles are completely coated.

I can still, after all these years, cook something I have never tried to make at home before. I also discovered that over the years, I am more adventurous. I crave taking on a new cooking challenge. Plus my taste buds have become more developed.

It didn’t surprise me when I texted my girl to see if her and the boyfriend wanted some chicken chow mein. Her response was “Is it homemade”? Yes, I tell her. With that she states, in that case, yes we will come for chow mein. That definitely put a smile on my face and our bellys full and satisfied too.
